Microwave Cappuccino Muffins




Welcome back to EetrsObsessions. Again I am doing a post about muffins and hopefully I will have more. This muffin is one or the worst to bake. They take all the ingredients in the house and they don't come out of the pan. But they taste very good. So as always I used a little of the batter and made a small batch in the microwave and as always it worked out perfectly. But when I scaled down this recipe I had some trouble but all in all it worked out.

The ingredients:

For the muffins:

1/4 cup flour + 1 Tbsp
1 Tbsp white sugar
1 Tbsp brown sugar
1/4 tsp instant coffee powder
1/4 tsp baking powder
1/8 tsp cinnamon
1/2 Tbsp beaten egg
1 Tbsp melted butter
2 Tbsp milk
1 Tbsp chocolate chips

For the topping:

1-2 tsp flour
1/2 Tbsp brown sugar
a pinch of cinnamon
1/2 Tbsp cold butter

For the drizzle:
2 Tbsp confectioners sugar
a splash of milk


The Muffin:



Start by adding the dry ingredients in a bowl ( straight sided bowls work well and look very nice).


Whisk it together.


Add the wet ingredients.


Whisk until smooth and add the chocolate chips. The first time I took the photos for this recipe I forgot the chocolate chip but if you do it still tastes very good.

The Topping:



Add all the ingredients to a bowl. 


With a pastry blender combined the ingredients until the butter is in pea sized lumps.


Add the topping ( or streusel ) to the batter.


The Drizzle:


Microwave for one minute. Then mix the glaze with a spoon of whisk and drizzle it on top. After all that work you are done this tastes amazing so I hope you enjoy this recipe.
