Microwave Monday #6 Sugar Cookie Cake

I was attempting to make a caramel cake and it tasted just like a sugar cookie. Me and my Mom were very surprised because we thought that using caramel instead of sugar would taste caramel-y… Well I guess you learn something new every day :)

The Ingredients:
6 Tbsp flour
1/4 tsp baking powder
3 Tbsp melted butter
1 egg yolk
3 Tbsp milk
1 tsp-1 Tbsp white sugar


Add your sugar to a bowl ( a mug might work).


Whisk it together.


Add everything else except for the white sugar.


Whisk that together.


And microwave for 1 1/2 minutes.


The moment it comes out of the microwave sprinkle the sugar. This is one of my favorites and I hope you like it too!

Microwave Monday #4 Cookies And Cream/Oreo Cake


Oreos make great baking ingredients. They can be in the bottom of cupcakes, used as decoration, or beaten into frosting. I both added them to the cake and the frosting. I also made it into my first ever microwave layer cake, my first frosted microwave cake, and as a final achievement I made my first white microwave cake.

The ingredients:

1 egg white
1/2 cup flour
1/2 tsp baking powder
1/4 cup sugar
1/4 cup or 1/2 stick of butter
1/4 cup milk
1 tsp vanilla
4 Oreo cookies
Vanilla Buttercream
and a 5 1/2 x 7 1/2 x 1 1/2 lunch container.


Start by beating the egg whites until stiff peaks form.


Add all of the other ingredients except for the buttercream and cookies.


Beat it all together until smooth.


Mix in two crushed Oreos into the batter.


Pour into the pan.


Microwave for 1-2 minutes and allow to cool completely.


After that I cut the cake in half and stacked them onto of each other just a layer cake.



Finish by beating the remaining Oreos into the frosting, filling the cake and then frosting the cake.

Microwave saltine toffee



My mom makes saltine toffee all the time and it tastes so good. It disappears in about a day ( one batch is made in a standard cookie sheet so we eat it fast ). I thought I would try it in the microwave. It worked amazingly and tasted exactly the same.

The ingredients:


2-4 saltine crackers
2 TBSP butter
2 TBSP brown sugar
1-2 TBSP chocolate chips.


Find a small square glass container and lightly grease with cooking spray.


Fill the bottom of the pan with the saltines.


Put the butter and brown sugar in a microwave safe glass container ( I would suggest a small liquid measuring cup ).


Microwave for 15 seconds and stir.


Microwave for 15 seconds and stir again.


Microwave for 15 more seconds and stir.


Pour over the saltines and spread evenly.


Microwave for a final 15 seconds.


Sprinkle the chocolate chips over the hot toffee and let them melt.


Spread the melted chocolate over the toffee. Refrigerate until the chocolate has hardened. Makes 1-2 servings. Enjoy!


Variation: add cinnamon and vanilla to the candy before you pour it over the saltines.
