Caramel Sauce

Caramel is an essential ingredient for anything that I make. It is so delicious, smooth, and rich. Yes caramel is almost the most dangerous food to cook, its up there with making pretzels with lye and candy, but I haven't been burnt yet so thats good. I would like to warn you about being burnt by steam when adding the cream. This recipe is delicious when the cooled caramel is whipped until fluffy it tastes delicious .

The Ingredients 

1/2 cup white sugar
1/4 cup + 2 TBSP cream
1 TBSP butter
1 tsp vanilla
a pinch or Fleur De Sal



Cook the sugar in a dry pot over medium high until it melts and turns a golden color. The darker you cook it the more bitter and flavorful it is. But the lighter you cook it the sweeter it will be. Take the hot caramel off the heat and slowly add the cream whisking constantly. Be careful it will foam up a lot. Mix in the butter and vanilla. Add the Fleur De Sal. Thats it your done its that easy.

Colored Sugar

Today I have an extremely easy recipe. Colored sugar! For demonstration purposes I made a cake and tried to stencil the words Eetrs Obsessions on it but that didn't work to well. But since I used box cake mix ( almost my favorite kind ) the only mistake was the decoration. So lets get this recipe started.


Ingredients:

1 cup of white sugar
2-4 drops food coloring
a plastic bag.


Start by putting the sugar in bag.


Add 1-2 drops of food coloring and shake, massage, and mix until most of the food coloring is incorporated.


Add more food coloring. At this point add as much as you want. More for darker sugar and less for lighter sugar. 


Give this the most mixing and massaging that you can.


After that your done! But I do have a suggestion. Since the food coloring is wet the sugar will harden slightly. To fix this just sew a small piece of paper into a pocket and fill it with rice then sew it closed. The rice will absorb the residual moisture leaving your sugar as dry as the desert.

Crystalized Ginger

Welcome back to my blog! My previous blog BoyWhoCooks had some trouble and I had to make a new one. Technically BoyWhoCooks is not owned by anyone. So now I have Eetrs Obsessions which will have not only recipes but Minecraft/Tekkit videos and anything else I would like to post. With out further ado I present crystalized ginger.

Ingredients:

100g Ginger
1 cup sugar plus more for rolling
1 cup water


Start by peeling the ginger.


And then thinly slice the ginger. Mine was way to thick, the second time I made this I cut it much thiner.


At this point I weighed it.


Next put the sugar and water in a pot.


And bring it to a boil.


Cook the ginger in the syrup for 1-3 hours.


Let it dry for 1-2 hours this step is crucial the ginger turns from a fibrous root into candy.


After the ginger is dry roll it in sugar to coat.


And thats it. This is good on it's own but it is also good in ginger bread. Lastly save your ginger syrup it will help sore throats but make sure not to expose it to sugar crystals or it will turn into wet sugar.
